I really loved the graphics in The Curse of Monkey Island, Syberia, Syberia II and Paradise.
To me, Art Direction is more important than any technical aspects. So in that regard, I think I will always prefer pre-rendered 2D over modern 3D engines. That's why I'm a huge fan of Benoît Sokal and Bill Tiller. So... some people say Keepsake is their favorite, graphics-wise. I guess I shoud try that one too, eventually.

Gotta say The Curse of Monkey Island is pretty much the definitive awesomest cartoon styled graphics ever. Probably because Lucas Arts is a fairly wealthy company, I mean compare it with Sierra's similar games at the time like Leisure Suit Larry 7 and you'll see just how ahead Lucas Arts really were (that is a nice looking game in it's own right though :p)

Well, I would vote for the Myst (URU included) series in general. All of them had spectacular graphics for the their time. Even Myst V despite being technologically behind of its time had great art direction.

The Secret of Monkey Island and Loom... oh my, I don't know where I've seen a computer game with imagery that even comes close to how beautiful these games are.
I played Battlefield 2 for the first time today, and I was amazed at how awesome the graphics were. But they aren't beautiful and amazing like the aforementioned games.
